Sometimes, delicious happens by accident. As a result of a little oil and some seasoning, leftover baked sweet potatoes become caramelized goodness. In addition, it takes no effort to create a “real food” side dish. And while they’re great for an everyday meal, Simply Sweet Potatoes, are a part of a fabulous holiday menu, too.
Simply Sweet Potatoes
Ingredients
- Sweet potatoes
- Extra virgin olive oil
- Seasoning (I use Frankly Delicious)
Instructions
- Bake sweet potatoes until almost done. Cool completely. Sometimes I refrigerate, or let sit overnight. Then cut into circles about 1/2" thick.
- Heat a heavy skillet on medium. Coat bottom with oil.
- When oil is hot, place sweet potato circles in skillet. Brown on both sides.
- Serve warm or room temp.
- We love them plain, but you could top with a cream cheese or sour cream topping. I could imagine dried cranberries and nuts being included in the topping. And really, using the sweet potato disk as an appetizer base, the number of toppings from shredded pork to cabbage and bacon are pretty numerous and delicious to think about.
