This is a light version of tuna salad, with big flavor. You’ll get two meals out of one can of tuna. I had mine in lettuce wraps with pickled garden veggies.
Slimmed Down, Dressed Up Tuna (Cooking For One)
Ingredients
- 1 (4.5 oz) can tuna packed in olive oil (I add some of the olive oil also)
- 1/2 cup grated carrot
- 1/2 cup chopped celery
- 2 TBSP chopped cilantro (or basil)
- 1 TBSP capers
- 1/3 cup plain Greek yogurt
- 1 TBSP mustard seeds (optional but adds great texture)
- 1 TBSP Dijon mustard
- 1 TBSP horseradish (optional)
- 1 tsp smoked paprika
- 1 tsp Worcestershire
- 1 tsp honey (you need it to balance the flavor)
- 1/2 tsp granulated garlic powder
- 1/2 tsp granulated onion powder
- 1/4 tsp Old Bay Seasoning
- Zest and juice of half a lemon
- Salt and pepper

Instructions
- In a medium bowl, combine all salad ingredients.
- In a small bowl, combine all dressing ingredients.
- Add the dressing to the salad ingredients.
- Grab a spoon, you're done.
