Slimmed Down, Dressed Up Tuna (Cooking For One)

This is a light version of tuna salad, with big flavor.  You’ll get two meals out of one can of tuna.  I had mine in lettuce wraps with pickled garden veggies.

Slimmed Down, Dressed Up Tuna (Cooking For One)

Prep Time: 15 minutes

Yield: Serves 1 with leftovers!

Ingredients

    Salad
  • 1 (4.5 oz) can tuna packed in olive oil (I add some of the olive oil also)
  • 1/2 cup grated carrot
  • 1/2 cup chopped celery
  • 2 TBSP chopped cilantro (or basil)
  • 1 TBSP capers
  • Dressing
  • 1/3 cup plain Greek yogurt
  • 1 TBSP mustard seeds (optional but adds great texture)
  • 1 TBSP Dijon mustard
  • 1 TBSP horseradish (optional)
  • 1 tsp smoked paprika
  • 1 tsp Worcestershire
  • 1 tsp honey (you need it to balance the flavor)
  • 1/2 tsp granulated garlic powder
  • 1/2 tsp granulated onion powder
  • 1/4 tsp Old Bay Seasoning
  • Zest and juice of half a lemon
  • Salt and pepper

Instructions

  1. In a medium bowl, combine all salad ingredients.
  2. In a small bowl, combine all dressing ingredients.
  3. Add the dressing to the salad ingredients.
  4. Grab a spoon, you're done.
