Our mealtime repertoire needs some new and interesting side dishes, like Beets with Horseradish Cream. It took me a while to start liking beets. And although they still are not my favorite veggie, I’m always concerned about diversity in the foods I eat. In addition, there are numerous health benefits to celebrate by including delicious beet recipes in your diet. I particularly love Gefen cooked and vacuum-sealed beets. They are really mild, and no mess with cooking them.
Sour Cream Parsleyed Beet Salad
Ingredients
- 1 lb cooked beets, sliced or chunked up
- 1/2 cup sour cream (or combo of sour cream and mayonnaise)
- 2 TBSP horseradish mustard
- Extra horseradish, if desired
- 1 TBSP dried dill or 2-3 TBSP fresh dill, chopped
- Salt and pepper
- 1/4 cup chopped parsley
Instructions
- In a large bowl, combine all ingredients except parsley. Refrigerate for at least an hour.
- Sprinkle with parsley when serving.
- Additions: kalamata olives, cooked potatoes
