Spicy Shrimp with Pasta, Mushrooms, and Spinach

Spicy Shrimp Pasta

Spicy Shrimp with Pasta, Mushrooms, and Spinach

Cook Time: 20 minutes

Yield: Serves 4-6

Ingredients

  • 1 small onion, chopped
  • 6-8 large garlic cloves, chopped
  • 1-2" piece ginger, chopped
  • 2 TBSP agave syrup or honey
  • 2 TBSP soy sauce or tamari
  • 2 TBSP smoked paprika
  • 1 TBSP crushed red pepper flakes
  • 1 TBSP toasted sesame oil
  • Salt and pepper
  • 2 lbs whole cleaned shrimp or scallops
  • 3 TBSP olive oil or coconut oil
  • 1 bunch spinach
  • 1 lb sliced mushrooms, cooked
  • 1/2 lb pasta,cooked (reserve 1 cup cooking water)

Instructions

  1. In a food processor, combine the first 9 ingredients. Process to a paste. Combine with shrimp and let marinate in fridge for at least 3 hours.
  2. Heat a large skillet on medium-high. Add oil. When the oil is hot, add the shrimp and reserve the marinade.
  3. When the shrimp is almost cooked, lower heat, add reserved marinade and spinach, and cover pan. In a minute or so, when the spinach is wilted, add mushrooms and pasta, then toss well.
  4. Add a 1/2 cup of the pasta cooking water.
  5. Toss, taste, and adjust seasoning. Add more cooking water if needed.
  6. Finish with a drizzle of toasted sesame oil.
