Spicy Shrimp with Pasta, Mushrooms, and Spinach
Ingredients
- 1 small onion, chopped
- 6-8 large garlic cloves, chopped
- 1-2" piece ginger, chopped
- 2 TBSP agave syrup or honey
- 2 TBSP soy sauce or tamari
- 2 TBSP smoked paprika
- 1 TBSP crushed red pepper flakes
- 1 TBSP toasted sesame oil
- Salt and pepper
- 2 lbs whole cleaned shrimp or scallops
- 3 TBSP olive oil or coconut oil
- 1 bunch spinach
- 1 lb sliced mushrooms, cooked
- 1/2 lb pasta,cooked (reserve 1 cup cooking water)
Instructions
- In a food processor, combine the first 9 ingredients. Process to a paste. Combine with shrimp and let marinate in fridge for at least 3 hours.
- Heat a large skillet on medium-high. Add oil. When the oil is hot, add the shrimp and reserve the marinade.
- When the shrimp is almost cooked, lower heat, add reserved marinade and spinach, and cover pan. In a minute or so, when the spinach is wilted, add mushrooms and pasta, then toss well.
- Add a 1/2 cup of the pasta cooking water.
- Toss, taste, and adjust seasoning. Add more cooking water if needed.
- Finish with a drizzle of toasted sesame oil.
