If you want a great lunch or brunch with your friends, Spinach Bacon Quiche is an easy cheesy special treat. We paired it with a spinach almond strawberry salad, and it was a memorable meal!
Spinach Bacon Quiche
Ingredients
- 1 (9") piecrust
- 6 large eggs
- 1 1/2 cups heavy cream
- 1-2 TBSP Dijon mustard
- Salt
- Black pepper
- Grating of nutmeg, optional
- 1 1/2 cups shredded Swiss cheese
- 1/4 cup Parmesan cheese
- 2 cups fresh baby spinach*
- 3-4 oz cream cheese
- 1 cup cooked and crumbled bacon or diced ham
Instructions
- Preheat the oven to 375 °F.
- Whisk together eggs, cream, dijon, salt and pepper, and nutmeg. Stir in swiss, parmesan, and spinach (if pre-cooked).
- Scatter a layer of bacon and dollops of cream cheese in the bottom of the pie crust and the spinach (if you haven't pre-cooked), then pour the egg mixture on top.
- Bake for 35 to 45 minutes or until the egg mixture is set.
- *I cooked the spinach with butter & garlic, then drained and chopped
- Notes: Nutmeg, spinach, and cream go well together. Dijon and swiss cheese are good flavor companions! And if you don't want to use spinach, use cooked and chopped asparagus.
