Spinach Stuffing Balls

Spinach Stuffing Balls are another classic recipe worth resurrecting.  They are perfect as a side, an appetizer, a snack, or in chicken soup.

Ingredients

  • 1/2 cup butter
  • 2 large onions, chopped
  • 20 oz frozen chopped spinach, defrost and squeeze out excess liquid
  • 6 eggs
  • 2 cups herb stuffing mix
  • 1 cup grated Parmesan
  • 1 tsp fresh thyme leaves
  • 1 tsp pepper
  • 1/2 tsp garlic pwd
  • 1/2 tsp salt
  • Grating of fresh nutmeg

Instructions

  1. In a skillet, melt butter.
  2. Add onions and cook until they're translucent.
  3. Stir in spinach and cook for another couple minutes. Set mixture aside to cool.
  4. In a large bowl, beat eggs.
  5. Combine the remaining ingredients with the eggs.
  6. When spinach mixture has cooled, add to stuffing mixture.
  7. Place in fridge for at least 1 hour.
  8. Heat oven to 350.
  9. Form 1" balls and place on parchment lined baking sheet.
  10. Bake about 20 minutes until some edges are slightly brown.
  11. If you don't want to cook them all, freeze in a single layer, then place in a ziplock freezer bag.
