It’s time to say goodbye to my kale. I picked the last of it, and decided a slaw would be good. Then, I pulled some golden beets and the green tops were beautiful, and the golden beets are delicious raw in a salad. Also, I pulled some carrots, so the ingredient list was falling in place!
Spring Slaw
Ingredients
- 1/2 cup sugar
- 1/4 cup vinegar
- 1/4 cup oil
- 1/2 TBSP kosher salt
- 1/2 tsp mustard seed
- 1/2 tsp celery seed
- Dill seed, little-if desired
- 10-12 cups of chopped greens (kale and beet greens are what I used)
- 1 TBSP granulated onion powder
- 1 cup shredded or julienne golden beets
- 1 cup thinly sliced or julienne carrots
Instructions
- Mix first 4 ingredients in a small pan and simmer until sugar dissolves. Add mustard, celery, and dill seed.
- Place greens in a large bowl. Sprinkle with onion powder. Add the rest of the slaw ingredients.
- Pour dressing over greens while it's hot. Toss well.
- Toss every few minutes, until the greens are wilted a bit.
- The longer it marinates together, the better it gets.
