Spring Slaw

It’s time to say goodbye to my kale.  I picked the last of it, and decided a slaw would be good.  Then, I pulled some golden beets and the green tops were beautiful, and the golden beets are delicious raw in a salad.  Also, I pulled some carrots, so the ingredient list was falling in place!

Total Time: 20 minutes

Yield: Serves 8-10

Ingredients

  • 1/2 cup sugar
  • 1/4 cup vinegar
  • 1/4 cup oil
  • 1/2 TBSP kosher salt
  • 1/2 tsp mustard seed
  • 1/2 tsp celery seed
  • Dill seed, little-if desired
  • 10-12 cups of chopped greens (kale and beet greens are what I used)
  • 1 TBSP granulated onion powder
  • 1 cup shredded or julienne golden beets
  • 1 cup thinly sliced or julienne carrots

Instructions

  1. Mix first 4 ingredients in a small pan and simmer until sugar dissolves. Add mustard, celery, and dill seed.
  2. Place greens in a large bowl. Sprinkle with onion powder. Add the rest of the slaw ingredients.
  3. Pour dressing over greens while it's hot. Toss well.
  4. Toss every few minutes, until the greens are wilted a bit.
  5. The longer it marinates together, the better it gets.
