Squash Salad and Shrimp
Ingredients
- 1 lb shrimp (peeled)
- Old Bay® Seasoning (at least a heaping tablespoon)
- 2 lbs fresh summer squash
- Juice of 1 or 2 lemons
- Granulated onion powder
- Granulated garlic powder
- Salt and pepper
- Drizzle extra virgin olive oil over all
- Add lots of fresh basil, torn
Instructions
- Cook the shrimp in boiling water seasoned with Old Bay® Seasoning until just done (barely turns opaque, reddish, and curls slightly). Drain and place in refrigerator.
- Use a potato peeler to slice the squash into a large bowl, peeling all the way down the sides to form ribbons. Much like you would to form carrot curls. Continue going around the squash, but avoid using the seeds (too watery in salad).
- Pour lemon juice over squash.
- Sprinkle with onion, garlic, salt and pepper.
- Drizzle well with oil.
- Add basil and toss salad well.
- When shrimp are cool, toss with squash, adjust seasoning.
- Serve.
This sounds yummy. I think I may need to try this this weekend. Works out well with the HEB special on Shrimp!
