Still in My Garden

This time of year in our extreme heat there isn’t much that will thrive in the garden.  However some plants do like the heat as long as they are watered regularly.  Okra, some peppers such as jalapeno and banana and eggplant do well throughout the heat of the summer. I have always had better luck with an Asian variety of eggplant such as Ichiban which are a long slender variety as opposed to the globe shaped eggplant. Right now my challenge is to find things to do with all the eggplant I am getting. Much like the squash problem in the early summer. My favorite way to use it up is in Ratatouille.
