I’m on a quest for new side dishes, for the lodge, and Street Corn Casserole has definitely made the cut. It’s so yummy and easy, it will be in our home meal plans too.
Street Corn Casserole
Ingredients
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 tsp chili powder
- 1/2 tsp granulated garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne (optional)
- 1/4 tsp salt
- 1/4 tsp pepper
- 32 oz frozen sweet corn, defrosted and drained
- 1/2 cup grated Parmesan or crumbled feta cheese
- 1/4 cup chopped green onions
- Lime wedges (optional)
- Chopped cilantro (optional)
Instructions
- Heat oven to 350.
- In a large bowl, combine the first 8 ingredients.
- Stir in the corn, cheese, and onions.
- Place in a greased 8x8 ovenproof pan.
- Bake covered for 20 minutes. Uncover sprinkle with more parmesan or feta, if desired, and bake for an additional 15-20 minutes until bubbly.
- Garnish with chopped cilantro and green onion, and serve with lime wedges, if desired.
