We haven’t had our fill of summer veggies, yet. We bought some squash and some okra at the farmer’s market. When we got home, Don thought we should put them together with some of his homegrown red onions. So, we made Summer Squash, Okra, and Bacon. Because really, why not add some bacon?! Enjoy this stellar side dish, with any summer meal.
Summer Squash, Okra, and Bacon
Ingredients
- 3 TBSP butter
- 1 TBSP extra virgin olive oil
- 1 medium (red) onion, chopped
- 2 cloves garlic, chopped
- 3 medium summer squash, sliced
- 1 lb young okra, sliced
- 1/2 cup cooked and crumbled bacon
- 1 tsp granulated garlic
- 1 tsp granulated onion
- 2 tsp Italian seasoning
- All purpose seasoning and/or Tony Chachere
Instructions
- Heat a large skillet on medium. Add butter and oil,
- Add onion, and cook until it starts to get tender. Add garlic. Cook a couple minutes.
- Stir in squash and okra. Cover. Continue cooking, stirring occasionally.
- Stir in the bacon and all the seasonings. Add or substitute seasonings that you like.
- Continue cooking until the squash and okra are done the way you prefer them.
