As with so many of my recipes, I had pantry items that I needed to use. Delicious on it’s own, or as filling for lettuce wraps, Sweet Potato Italian Sausage Bake is a great addition to our meal rotation.
Sweet Potato Italian Sausage Bake
Ingredients
- 1 TBSP olive oil
- 1/2 medium onion, chopped
- 1 1/2 lbs sweet potatoes, cleaned an cut in 1/2” cubes
- 2 cloves garlic, pressed or minced
- 1/2-3/4 lb cooked and crumbled Italian (hot) sausage
- 2 tsps Italian seasoning
- Salt and pepper
- 1 (14.5 oz) can fire roasted diced tomatoes
- 8 oz cream cheese, cut in cubes (or 2 boxes garlic and fine herb Boursin)
- 1/3 cup grated Parmesan
- 1 tsp fresh thyme leaves (optional)
- 2 green onions, thinly sliced
Instructions
- Heat oven to 375.
- Heat oil in a large skillet over medium heat. Add onion and cook until nearly translucent.
- Stir in sweet potatoes. Cook, stirring occasionally until just tender on outside, 10-12 minutes. Stir in garlic about 1 minute before potatoes are done.
- Stir in sausage, seasonings, tomatoes, and cheeses. When cheese melts, add fresh thyme.
- Transfer to greased baking dish. Cover and bake about 25 minutes, until potatoes are tender.
- Remove from oven, uncover, top with green onion, and serve.
- Serving suggestions: in lettuce wraps, with bagel chips, on rice, in a tortilla
