Tapenade Baked Fish

Tapenade Baked Fish

Tapenade Baked Fish

Ingredients

  • White fish fillets
  • Lemon or orange
  • Black olive tapenade
  • Tomato slices
  • Herbs
  • Salt and pepper

Instructions

  1. Grease a baking pan the fish will lay flat in. Heat oven to 350.
  2. Lay fillets in pan.
  3. Squeeze a little lemon or orange over fillets.
  4. Generously spread each fillet with tapenade.
  5. Lay tomato slices on top of tapenade.(I used halved grape tomatoes because that's what I had)
  6. Sprinkle with herbs, salt, and pepper.
  7. Bake about 20 minutes or until fish is cooked.
  8. Note: Use your favorite herb combination. I used garlic herb mix and some Italian spices. Herb de Provence works well also.
