For all the leftovers (particularly meat) that you have this holiday season, make a plan for them. It’s a great timesaver for meals the rest of the week. Don has decided he needs to rotisserie a pork butt once a month! It’s too much food for us to eat all at once, so here’s a typical leftover plan in our house, for whatever meat we fix. Re-cooking meat by using a little olive oil and frying it is always a hit in this house. So, after our meal of enjoying the meat (in this case pork) as the star, then I’ll fry some of the leftover and make: stuffed potatoes, fried rice, nachoes, grilled cheese and pork sandwiches (or quesadillas), and soup (if I have enough). Other meals to consider: pot pies, enchiladas, and pizza. And if it’s just too much to think about, freeze it in portions to use later. My niece had a great idea for leftover stuffing – she made meatballs that she said turned out awesome. In the south, dressing is typically preferred over stuffing, so think about making a chili pie or tamale pie with the leftovers.
