Tomato Soup

I just made some homemade tomato soup because I can’t ever find a really good one that doesn’t have wheat in it or is just too expensive.

Tomato Soup

Ingredients

  • 2 tablespoons butter
  • 1 teaspoon olive oil
  • 1 carrot chopped in small slices
  • 1 large rib of celery chopped
  • 1/4 chopped onion
  • 1/4 chopped red pepper
  • 2 cups chicken broth
  • 1 can fire roasted tomatoes
  • 1 can tomatoes with basil and garlic
  • 1 and 1/2 teaspoon basil
  • a tiny pinch of cloves
  • 1 teaspoon sugar
  • 1/4 to 1/2 cup cream or half and half, or more if you want

Instructions

  1. Heat oil and butter in a 2 quart saucepan, and saute carrot, celery, onion, and red pepper until crisp tender.
  2. Add chicken broth and the rest of the ingredients except the cream.
  3. Cover the pan and simmer everything until vegetables are tender.
  4. Process in a blender in small batches until smooth.
  5. Then add cream.
  6. I didn't add any salt because it didn't seem to need it.
  7. Other additions could be: thyme, rosemary, or red pepper flakes
