I just made some homemade tomato soup because I can’t ever find a really good one that doesn’t have wheat in it or is just too expensive.
Tomato Soup
Ingredients
- 2 tablespoons butter
- 1 teaspoon olive oil
- 1 carrot chopped in small slices
- 1 large rib of celery chopped
- 1/4 chopped onion
- 1/4 chopped red pepper
- 2 cups chicken broth
- 1 can fire roasted tomatoes
- 1 can tomatoes with basil and garlic
- 1 and 1/2 teaspoon basil
- a tiny pinch of cloves
- 1 teaspoon sugar
- 1/4 to 1/2 cup cream or half and half, or more if you want
Instructions
- Heat oil and butter in a 2 quart saucepan, and saute carrot, celery, onion, and red pepper until crisp tender.
- Add chicken broth and the rest of the ingredients except the cream.
- Cover the pan and simmer everything until vegetables are tender.
- Process in a blender in small batches until smooth.
- Then add cream.
- I didn't add any salt because it didn't seem to need it.
- Other additions could be: thyme, rosemary, or red pepper flakes
