Simple and delicious, triple mash is great winter comfort food. Before you say that you don’t like turnips, just try it. The sweet potatoes and turnips are great for carb smart diets, just leave out the white potato. All three together are a rustic mash, and a yummy side dish. We’re having it for the holidays.
Triple Mash
Ingredients
- 4 medium turnips, peeled and cut in chunks
- 1 medium sweet potato, peeled and cut in chunks
- 1 medium gold potato, cleaned and cut in chunks
- Chicken stock
- 1/4-1/2 cup sour cream
- 1/4-1/2 cup butter
- Salt and pepper
- Cooked and crumbled bacon bits (optional)
- Chopped green onion (optional)
Instructions
- Place the turnips and potatoes in a pot (or Instant Pot). Add some salt, and just enough stock to steam them. Cook until very tender. If you use an Instant Pot, cook 5 minutes and allow to vent naturally.
- Mash well with a hand masher.
- Add sour cream, butter, and salt and pepper. Continue mashing. Add bacon, if you like.
- Top with green onion when serving.
- Note: if the mash has a little too much liquid, leave it on low heat to let some of the liquid evaporate.
