Easter Saturday was a perfect day to be at the Waco Downtown Farmers Market. It was a little cool, overcast, lots of people, and lots of vendors. Prairie Dell Meat Company was finally there, and I bought some of their pork salami. I can’t wait to try it. My vegetables have started growing really well, so I didn’t need to buy any veggies, but I did leave with more short ribs and tamales.
We had breakfast burritos, for a noon snack, then it was off to walk the river to Cameron Park with the dogs. I forgot to mention we took dogs with us, and they were pretty excited about the whole thing, mainly because there were a lot of food scraps to be found! Of course, the scraps were essential for Dixie to have the energy to chase all the resting ducks back into the water.
Later, I was lucky enough to be invited to a crawfish / shrimp boil. And I have to say, I’m not a crawfish lover, but these were excellent, hot, and mountains of them.
Easter we went to a cookout at Don’s brother’s house, so my cooking was confined to dessert. I’ll share the recipe in the next couple days. I had to do a little QC before I took it, so I was sure it was good enough. That’s my story, and I’m sticking to it.
