It was a weekend of great friends, great fun, great weather, and of course great food. What else is there really?
We were fortunate enough to be able to stay in this fabulous lake house that belongs to a good friend. It really was the perfect time of year, quiet and cool. Some of us were energetic enough to kayak! And of course there was card playing and DVD watching.
And how could you possibly spend a weekend like this without good food! Some of the highlights were our breakfasts.
We started Saturday with a ham, onion, and parmesan frittata with baked oatmeal and baked apples. There is a Baked Oatmeal recipe on this site, but Nina added bananas and sliced strawberries to hers. It was delicious.
We started Sunday with Avocado Tacos! Gaye mixed barely mashed avocados with granulated garlic powder and adobo seasoning. Put that in a corn tortilla with lettuce, chopped tomatoes, salsa, and shredded cheese if you want, and try to not have a smile on your face.
Of course we had to have jalapeno poppers. The filling is usually just cream cheese and garlic powder, but we had some cream cheese mixed with capers, green onion, and dill left from the smoked salmon appetizer, so we used it to stuff some of the jalapenos. We topped them all with cut up pieces of bacon, and broiled them until the bacon looked like you just could wait to eat it! The cream cheese with capers, onion, and dill is now my new favorite popper filling!
Tomorrow I hope to have all the pictures of the botanical garden for you. It’s worth a day trip for sure.
