I looked at the Mother Earth planting guide for this area, and here’s what I’ll be planting in February: beets, carrots, collards, mache, radish, sorrel, spinach, lettuce, potatoes, onions, and eggplant. I’ll be using plenty of fish emulsion, Garrett Juice, and organic fertilizer to help add nitrogen to the soil. I’d plant arugula, but apparently I have a continuous crop going. If we get more freezing weather I’ll have to cover some things. I do have some spinach and lettuce that overwintered, but I had it covered most of the time.
Last year there were some large lamb’s quarters plants growing by the garage, and I let them go to seed. Well, now there’s baby lamb’s quarters growing everywhere, particularly in the granite walkway. I usually just pull it when it’s small, and toss it onto the grassy area. As I was pulling all these plants up, I decided to put them in my salad! They’re a lot like sprouts, really tender, and really tasty. For another month or so I should have lamb’s quarters “sprouts” any time I want them, and I’m pretty happy about that.
