It’s another good year for our asparagus harvest. As usual, I’m looking for great new ways to prepare it. I decided to use one of our favorite flavor combinations, and Asparagus Parmesan Ham Casserole is now our new season favorite. It’s simple and so scrumptious. And I can already see it on one of our holiday tables, also.
Asparagus Parmesan Ham Casserole
Ingredients
- 5-6 cups fresh asparagus, cut into 1" pieces
- 1/2 cup mayonnaise
- 1/2 cup grated parmesan
- 1 TBSP dijon mustard
- 1 cup thinly sliced Black Forest ham, diced
Instructions
- Heat oven to 350.
- In a large pot, bring water (enough to cover asparagus) to a boil. Add salt and asparagus. Simmer until crisp tender, about 3 minutes. Drain, pat dry.
- In a large bowl, combine mayonnaise, parmesan, and dijon.
- Add asparagus and ham to the mayonnaise mixture and combine well.
- Place in a greased baking pan.
- Bake uncovered for 20-30 minutes until bubbly.
