Author: Lanie Fioretti

My name is Lanie Fioretti and although I am not a classically trained chef or a degreed nutritionist, I have been studying food and nutrition voraciously since the early seventies. After working in public health and private practice for 22 years, I retired my dental hygiene license. I have taught cooking classes at Whole Foods and Central Market, done product development for a bakery in east Texas, catered, and been a personal chef. I usually think of myself as an improvisational cook!

Posted on September 9, 2018October 7, 2020 by Lanie Fioretti

If you’re looking for more great pecan recipes, try Pecan…

Lately, it seems that I can’t look at pork butt in the grocery store, without thinking of Hawaii. There are a few dishes that remind me  of the Aloha State.  Kalua Pork is top on my list.  Well, so is Poke, but it involves raw fish, so I’ll leave that alone!  When I realized I…

Corn Fritters

Posted on August 21, 2018October 7, 2020 by Lanie Fioretti

As a general rule, I don’t like hush puppies, because they’re usually dense and dull.  But give me great corn fritters, and I don’t know when to quit eating them!  These scrumptious light morsels accompanied the annual fried chicken feast.  Because great homemade fried chicken is quite a production, it’s a rare treat in our…

Chicken Stuffed Summer Squash

Posted on June 27, 2018October 7, 2020 by Lanie Fioretti

Luckily, we have good friends who have a great squash crop this year, and generously share it.  A few of the calabacita squash are large, so I made some incredible Chicken Stuffed Summer Squash, with the last ones.  Now, calabacita is a particular favorite summer squash for us, but yellow squash or zucchini both are…
