Author: Lanie Fioretti

My name is Lanie Fioretti and although I am not a classically trained chef or a degreed nutritionist, I have been studying food and nutrition voraciously since the early seventies. After working in public health and private practice for 22 years, I retired my dental hygiene license. I have taught cooking classes at Whole Foods and Central Market, done product development for a bakery in east Texas, catered, and been a personal chef. I usually think of myself as an improvisational cook!

For a scrumptious, deliciously moist dessert, Polenta Cake is a perfect ending.  Because it’s simple to make, you can treat your guests to a slice of European elegance.   PrintPolenta Cake Total Time: 2 hours Yield: Serves 8-10 Ingredients1 cup unsalted butter, softened 1 cup sugar 3 eggs, room temperature 1/2 cup pinenuts, toasted 3/4…

Polenta Biscuits

Posted on February 18, 2018 by Lanie Fioretti

What do I take to a gumbo party, Polenta Biscuits, of course!  Slightly sweet and crunchy, these bitesize beauties are like Italian hush puppies.  Since polenta is a comfort food for me, I always looks for ways to use this coarse ground yellow cornmeal.   While regular cornmeal is a cousin, it does not substitute…
